I had this for breakfast this morning so I thought I would share for any other calorie conscious individuals out there! :)
Breakfast Toast Pile-Up
1/8 Cup Mushrooms (I used canned slices)
1/2 Cup Fresh Spinach (Coarsely chopped)
1 Stalk of Celery (Sliced, thin slices)
1 Egg (Whisked)
1 Slice Whole Grain Bread
1 Teaspoon Lite Mayo
1 Tablespoon Vegetable Oil
Cut up all of your vegetables to your desired size chunks and plop them in a skillet on medium heat. Stick close-by and give the vegetables a good stir often until they are to your desired softness.
After you have whisked your egg in a separate bowl, pour the egg into the vegetables. Try not to scramble too much, you want the egg to stick together with the vegetables in it. If you are good at making omelettes, you might try that, but since I’m not (they always fall apart on me) I choose to do it this way.
Toast 1 slice of whole-grain bread and when it pops out of the toaster, evenly smear 1 tsp. of lite mayo across one side. Scoop your egg mixture on top of the toast and pepper the top.
Voila! Your Breakfast Toast Pile-Up! Complete with protein, veggies, and whole grains! All for around 215 calories!
